Maybe we have known each other a long time and you have tasted some of Nutrifree’s gluten-free products, or perhaps it’s the first time you’ve heard of us. In any case, we feel very lucky to have your attention, and if you have some time to devote to us (it won’t take long), we’ll tell you a little bit about our FREE world.
It all started with a dream
Because a smile is a bridge capable of overcoming every barrier, even when it comes to food.
At least this has always been the creed of Nicoletta and Giovanna, two Tuscan sisters who, over 15 years ago, decided to leave the family business, producer of the famous bread of the town of Altopascio, near Lucca, to specialise in free-from, bringing innovation to an arid territory that was off the beaten track.
Yes, because in those years, the gluten-free market featured very few products and little attention was focused on taste and nutritional aspects. Products that had very little to do with smiles.
Then we listened to your questions
And we could not be content to offer a product that was merely suitable for those who had to exclude gluten from their diet. We wanted to do more. That’s why we started listening. And we listened to everyone: families, doctors, nutritionists, friends, and employees who increased every year.
We worked long and hard and, between results and attempts, we have created one of the widest assortments of foods at the basis of a full and tasty free-from life.
And, together with you, we have built our idea of “WITHOUT”
FLAVOUR. WITHOUT IFS, ANDS OR BUTS.
The WITHOUT that we aim for is the mouth‑watering food, the one you would never let your friends taste for fear they'll ask you for more. But then you do anyway because you love them.

We did it one step at a time, one innovation at a time.
Here are the stages in the history of Nutrifree. Many have arrived after months of attempts, unrisen doughs and failed taste tests.
But all of them, sooner or later, brought out smiles and contributed, one after the other, to overcome barriers and to build our free world.
When it all began
Nicoletta and Giovanna decided that enough is enough: the world is full of bread with gluten. What was needed was a gluten-free bread worthy of this name, capable of uniting everyone at the same table.
Choosing the name
At this point, we had to choose a name that represented us. This is how Nutrifree was born: more than a name, a vocation. Our mission: to give free rein to flavour in a free-from life.
Our first home
To make a good product, hands-on experience is everything. And so our first facility exclusively dedicated to the production of gluten-free products was born in Altopascio, land of bread and hospitality. There are already 20 people working here and together, we begin to build our idea of without.
Our Panfette debuts
Our answer to gluten-free bakery products loaded with additives, animal fats and allergens was our sliced bread with extra-virgin olive oil, still today one of the most beloved Nutrifree products.
We launch our single‑serve ready‑to‑eat products
We thus respond to a threefold specific need of the coeliac: eating out, avoiding waste, especially when there is only one intolerant person in the family, ensuring greater safety from contamination.
Taking up the wholemeal challenge
We launched the project dedicated to fibre, to monitoring and controlling the glycemic index of gluten-free products in collaboration with the CURN (Centro Universitario per la Ricerca Nutrizionale - Center for Nutritional Research of the University of Milan), thus responding to a specific need of the coeliac diet.
Further expansion
Cresciamo e abbiamo bisogno di più spazio. Nasce ad AltoWe are growing and need more space. Our second facility dedicated to the exclusive production of gluten-free foods is inaugurated in Altopascio. Additional hands and minds are needed to shape the dream, and so now we are a group of 60 people. pascio il nostro secondo stabilimento dedicato alla produzione esclusiva di alimenti senza glutine. We arrive in supermarkets
We are committed to being found everywhere: in pharmacies, in specialised shops, in the OOH (Out-Of-Home) food sector, and, ultimately, even on supermarket shelves.
Our dream crosses national boundaries
Spain, the United Kingdom, Switzerland... our products conquer tables abroad.
Good things come in threes
Our third production plant is started up. Not in Altopascio this time, but just a little further away, in Porcari, still in the province of Lucca. New spaces, new technologies and lots of new products.
Not only gluten-free: our lactose‑free mission
We are open to anyone who wants to or must follow a gluten-free and lactose-free diet. We do it with a great many products formulated without lactose and/or milk or with delactosed raw materials. We are also committed to training and awareness projects dedicated to lactose intolerance, directed at pharmacies and specialised shops.
Free-from opens up to new experiences in flavour
Nutrifree’s Food&Club line is born. Behind fast food products is the desire to normalise the flavours and the convivial experiences of those who live free-from.
We become exclusive premium partner of the FIC (Italian Federation of Chefs)
The Italian Federation of Chefs chooses us for organoleptic and nutritional quality and, together with the chefs, we take steps to raise awareness about intolerances in the restaurant sector.
Going on holiday with Nicolaus Club
We are actively committed to ensuring quality nutrition even on holiday, not only with supplies of products but also with communication and training activities aimed at the professionals of the Nicolaus group's catering service.
With almost 200 products, we turn intolerances into opportunities for wellbeing
In addition to our in-house production that ensures 90% of our products are gluten-free and lactose-free, we have selected partners and brands in line with our product philosophy to offer a rich, varied Nutrifree assortment, excellent for normalising the life of those who follow alternative dietary regimes and for breaking down food barriers one smile at a time. We are now over 170 people. We like to call ourselves blue spirits. We believe in the same values and every day we strive to bring a little piece of our dream to your tables.
